Ingredients

  • 2 cups mixed fresh berries (raspberries, blueberries, strawberries)
  • 1/4 cup honey
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cardamom
  • 1/2 cup almond flour
  • 3 tbsp coconut oil, melted
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup chopped pistachios
  • 1 cup vanilla bean ice cream (optional)

Instructions

  1. In a saucepan over medium heat, combine the mixed berries, honey, and Moroccan spices. Stir occasionally until the berries release their juices and the mixture thickens, about 8 minutes. Set aside to cool.
  2. Preheat oven to 350°F (175°C). In a bowl, combine the almond flour, coconut oil, and shredded coconut until a crumbly dough forms. Press the mixture into the bottom of a 9 inch round tart pan with a removable base.
  3. Bake the crust for 15 minutes or until golden brown. Remove from oven and let cool completely.
