Ingredients

  • 1. 2 cups heavy cream 2. 1 can (14 oz) sweetened condensed milk 3. 1/2 teaspoon cardamom extract 4. 1 tablespoon rosewater 5. 1 package (16 oz) kadaifi dough 6. 1/2 cup chopped pistachios, for garnish 7. 2 cups water 8. 1 cup sugar 9. 1 tablespoon rosewater 10. 1/2 teaspoon cardamom extract 11. 1/4 teaspoon red food coloring (optional) 12. 1 teaspoon cornstarch mixed with 1 tablespoon cold water

Instructions

  1. Begin by preparing the syrup. In a saucepan, combine water and sugar, bring to a boil and cook until sugar is fully dissolved. Stir in rosewater, cardamom extract, and food coloring if using. In a small bowl, mix cornstarch with cold water and slowly add it to the syrup while stirring continuously. Cook for another 2 minutes, then remove from heat and let cool.
  2. Following package instructions, prepare kadaifi dough according to package directions. Shape into 4 inch cylinders and place on a parchment lined tray. Freeze until firm.
  3. In a large bowl, combine heavy cream, sweetened condensed milk, cardamom extract, and rosewater. Whisk until well combined.
  4. In a food processor or high speed blender, blend the frozen kadaifi cylinders into a smooth consistency. Gently fold the kadaifi mixture into the cream mixture until fully incorporated.
  5. Pour the mixture into an ice cream maker and churn according to manufacturer's instructions. Transfer the finished ice cream to a lidded container and freeze until firm, about 4 hours.
  6. To serve, scoop the ice cream into individual bowls or glasses, drizzle with the prepared syrup, and garnish with chopped pistachios.
