12 sheets phyllo dough
3/4 cup unsalted butter, melted
1 cup crushed walnuts
1 tsp ground cinnamon
1/2 tsp ground cardamom
Pinch of saffron threads, crushed
1 cup granulated sugar
3/4 cup water
2 tbsp lemon juice
1/4 tsp vanilla extract
Instructions
Preheat oven to 350°F (180°C). Cut the phyllo dough into 16 equal squares, and place a sheet of plastic wrap on your working surface. Lay one sheet of phyllo on the plastic, brushing it with melted butter.
Sprinkle a light layer of crushed walnuts, cinnamon, and cardamom over the buttered phyllo. Repeat this process until you have layered 4 sheets of phyllo with walnuts and spices.
Cut the layered phyllo into smaller squares, approximately 1 inch by 1 inch. Place these bites on a parchment lined baking sheet, and repeat the process until all phyllo has been used.
Bake for 15 minutes or until the baklava bites are golden brown. While the baklava is baking, prepare the syrup by combining sugar, water, lemon juice, and vanilla extract in a saucepan over medium heat. Bring to a simmer and cook for 5 minutes, then remove from heat and let it cool slightly.
Once the baklava has finished baking, pour the warm syrup over the bites and allow them to soak for at least 20 minutes before serving.
