Ingredients
1. 2 cups of diced ripe Mango (Alphonso preferred) 2. 1 cup of plain yogurt 3. 1/4 cup of sugar 4. 1/4 cup of fresh mint leaves 5. Ice cubes 6. 3 oz of white rum (optional, for a mocktail version, use lime juice instead) 7. A splash of mango juice or water to adjust consistency as needed 8. Crushed ice for shaking 9. Fresh mint sprigs and thinly sliced almonds for garnish
Instructions
Begin by pureeing the mangoes in a blender until smooth. Press through a fine mesh strainer to eliminate any pulp or fibrous bits, reserving the liquid and setting it aside.
In another blender combine yogurt, sugar, and mint leaves. Blend until the mixture is pale green and has fully incorporated.
Add half of the mango puree to this yogurt mixture. Adjust sweetness as needed by adding more sugar or a splash of mango juice/water. Give it another blend until smooth.
In a cocktail shaker, combine the mango yogurt mixture with crushed ice and white rum (if you prefer a mocktail version, substitute lime juice). Shake vigorously until the surface is frosted over with the bright aroma of mint.
Strain into glasses filled with fresh ice cubes. Garnish with more fresh mint sprigs and thinly sliced almonds for an added crunch. Raise your glass to the sunset!
