2 cups fresh or frozen mango chunks
1 cup coconut milk
1/2 cup lime juice
4 lemongrass stalks, bruised and chopped
1/3 cup agave syrup or honey (for non
vegan)
1 cup ice cubes
Fresh mango slices and mint leaves for garnish
Instructions
In a blender, combine the mango chunks, coconut milk, lime juice, and bruised lemongrass stalks. Blend until smooth.
Strain the mixture through a fine mesh sieve into a large measuring cup, pressing on the solids to extract as much liquid as possible. Discard the solids.
In a separate bowl, whisk together the agave syrup and ice cubes until well combined.
Pour the strained mango mixture into two glasses, filling them halfway. Top each glass with the agave ice mixture, stirring gently to combine.
Garnish with fresh mango slices and mint leaves, and serve immediately.
