  • 3 cups cold spring water
  • 2 oz lemon juice (freshly squeezed)
  • 4 oz agave syrup
  • 12 oz sparkling mineral water, chilled
  • Ice cubes
  • Lemon wheels and fresh lavender sprigs for garnish

Instructions

  1. Begin by infusing the lavender flowers with spring water. In a large jar, combine the lavender and cold spring water. Allow it to steep at room temperature for 4 hours or refrigerate overnight for a deeper flavor. Strain the lavender infused water into a pitcher, discarding the spent flowers. In a separate container, mix together lemon juice and agave syrup until well combined. Pour this mixture into the lavender infused water, stirring gently to combine. Chill the mixture in the refrigerator for at least 30 minutes to allow flavors to meld. To assemble the mocktail, fill each glass with ice cubes and pour approximately 6 oz of the chilled lavender lemon mixture into each glass. Top up with chilled sparkling mineral water and gently stir to combine. Prep: 5 minutes (plus 4 hours infusing or overnight) Cook: N/A Total: 5 minutes + 4 hours infusing or overnight
