  3. In a separate bowl, whisk egg yolks. Gradually add a small amount of warm lemon curd to the yolks, stirring constantly to avoid curdling. Repeat until about 1/4 of the curd is incorporated.
  4. Pour the tempered egg yolk mixture back into the saucepan with the remaining lemon curd and cook over low heat, stirring constantly, until it reaches a thick pudding consistency. Remove from heat and let cool completely.
  5. To assemble, place a generous spoonful of lavender lemon curd atop each halved honeyed macaron. Sprinkle generously with pistachio crumble.
