Ingredients
- 2 cups frozen açaí puree
- 1 can (13.5 oz) full
- fat coconut milk
- 4 medium limes, zested and juiced
- 2 tbsp raw honey
- 1/2 cup unsweetened shredded coconut
Instructions
- In a blender, combine the frozen açaí puree, coconut milk, lime zest and juice, and honey. Blend until smooth and creamy.
- Pour the mixture into a shallow dish and freeze for 4 hours or overnight, until firm.
- Just before serving, use a cookie cutter or knife to shape the frozen treat into individual portions.
- Toast the shredded coconut in a dry pan over medium heat, stirring constantly, until golden brown.
- Sprinkle the toasted coconut over the individual portions of the frozen treat and serve immediately.
