  2. Sprinkle gelatin into a small amount of cold water to bloom.
  3. In a separate bowl, whisk together the egg yolks. Gradually add a portion of the warm coconut milk mixture into the egg yolks, constantly stirring to avoid curdling.
  4. Pour the tempered egg yolk mixture back into the saucepan and continue cooking over low heat until the custard thickens slightly.
  5. Remove from heat and whisk in the bloomed gelatin until fully dissolved. Stir in the lime zest and juice.
  6. Pour the mixture into individual serving dishes or a single large dish, cover, and refrigerate for at least 4 hours or overnight to set.
