  • 2 ripe avocados, pitted and peeled
  • 2 tablespoons fresh lemon juice
  • 1/4 cup almond milk
  • 1/4 cup raw honey
  • 2 drops lemon essential oil (food grade)
  • Fresh mint leaves for garnish

Instructions

  1. In a medium bowl, whisk together the almond flour, coconut flakes, ground pistachios, sweetener, and sea salt until well combined. Set aside.
  2. In another bowl, blend the avocados, lemon juice, almond milk, honey, and lemon essential oil until smooth and creamy. Fold in half of the dry mixture, reserving the rest for the topping.
  3. Pour the blended mixture into two chilled dessert glasses or bowls, filling each about 2/3 full. Sprinkle the remaining dry mixture evenly over the top.
  4. Cover and freeze until solid, at least 6 hours or overnight.
  5. To serve, let sit at room temperature for a few minutes before enjoying. Garnish with fresh mint leaves.
