  • 1. 1 cup crushed graham crackers 2. 5 tbsp unsalted butter, melted 3. 1 can (20 oz) pineapple chunks in juice, drained and reserve 1/4 cup of the juice 4. 1 can (14 oz) sweetened condensed milk 5. 8 oz cream cheese, softened 6. 1 cup shredded coconut 7. 1 tsp vanilla extract 8. 1/2 tsp almond extract 9. 3 cups whipped cream 10. Toasted coconut flakes, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine crushed graham crackers and melted butter until well mixed.
  3. Press the mixture into the bottom of a 9 inch pie dish. Bake for 8 minutes, then set aside to cool.
  4. In a large bowl, mix together pineapple juice, sweetened condensed milk, cream cheese, vanilla extract, and almond extract until smooth.
  5. Fold in pineapple chunks, shredded coconut, and whipped cream until fully incorporated.
  6. Pour the mixture over the cooled crust and smooth the top.
  7. Refrigerate for at least 4 hours or overnight.
  8. Before serving, garnish with toasted coconut flakes.
