Ingredients
1 cup full
fat coconut milk
3 tablespoons lemon juice
2 cups mixed frozen berries (raspberries, blueberries, and strawberries)
2 tablespoons erythritol
2 cups ice cubes

Instructions
In a large mixing bowl, whisk together the coconut milk and lemon juice until well combined. This will create our frothy base. Refrigerate to chill.
In a separate bowl, combine the mixed frozen berries and erythritol. Gently toss to evenly coat the berries with the sweetener. Allow them to macerate for at least 10 minutes.
Fill two glasses with ice cubes, ensuring they are packed tightly.
Carefully pour the chilled coconut lemon mixture over the ice in each glass, filling about half of the glass.
Next, gently spoon the macerated berries into the glasses, taking care not to disturb the creamy layer below.
Top up each glass with more ice if needed, and then pour the remaining coconut lemon mixture until the glasses are almost full.
Finish off by delicately pouring sparkling water over the top, creating a gentle fizz.
Garnish with fresh berries and serve immediately.
