Ingredients
1. 8 oz boneless skinless chicken thighs 2. 1 cup basmati rice 3. 1/2 cup plain Greek yogurt 4. 1 medium onion, finely chopped 5. 2 cloves garlic, minced 6. 1
inch piece ginger, grated 7. 1 tsp ground turmeric 8. 1 tsp ground cumin 9. 1 tsp paprika 10. 1/2 tsp ground coriander 11. Salt and pepper, to taste 12. 3 tbsp olive oil 13. 1/4 cup fresh cilantro, chopped
Instructions
Rinse the basmati rice in cold water until the water runs clear, then drain well. Set aside.
In a large bowl, combine the yogurt, ginger, garlic, turmeric, cumin, paprika, coriander, salt, and pepper. Mix well to create the spiced yogurt sauce.
Heat 2 tbsp of olive oil in a pan over medium heat. Add the chopped onion and cook until golden brown, stirring occasionally.
Add the minced garlic and grated ginger to the pan with the onions, sautéing for about 1 minute or until fragrant.
Incorporate the spiced yogurt sauce into the pan, mixing well to combine. Cook for an additional 2 minutes, stirring frequently.
Add the chicken thighs to the pan, coating them in the yogurt mixture. Cook for 4 5 minutes, turning occasionally until the chicken is browned on all sides.
Add the rinsed basmati rice to the pan, stirring gently to combine with the other ingredients. Pour in 1 cup of water and bring the mixture to a boil.
Reduce heat to low, cover the pan, and let the biryani simmer for about 15 minutes or until the rice is cooked through and has absorbed all the liquid.
Remove the pan from heat, fluff the rice with a fork, and let it rest for 5 minutes before serving.
