Ingredients

  • 2 ripe but firm Bosc pears
  • 1 cup wildflower honey
  • 4 cups water
  • 1/2 cup dried elderflowers
  • 1/2 cup edible lavender flowers
  • 1 liter sparkling water
  • Lemon zest, for garnish
  • Fresh lavender blossoms, for garnish

Instructions

  1. Begin by poaching the pears. Combine honey and water in a saucepan and bring to a simmer. Add the pears and poach until tender, about 10 15 minutes. Remove from heat and let cool. In a separate container, combine elderflowers with boiling water to create an infusion. Let steep for 15 minutes, then strain through a fine mesh sieve. Chill the elderflower infused water in the refrigerator until cold. To serve, slice each pear into quarters and arrange them in the bottom of 6 elegant glasses. Top each with the chilled sparkling elderflower cordial, filling each glass to the rim. Garnish with a twist of lemon zest and a cluster of fresh lavender blossoms for a touch of Nordic whimsy.
