Ingredients
1 1/2 cups coconut cream
1 ripe pineapple, peeled, cored, and diced
3 passion fruits, halved and pulp separated from seeds
1 cup macadamia nuts, roughly chopped
1/4 cup white chocolate chips
1/2 cup heavy cream
1 tablespoon unsalted butter
Instructions
In a blender or food processor, puree coconut cream, pineapple, and 2 passion fruit pulps until smooth. Pour the mixture into a large mixing bowl and set aside.
In a double boiler, gently melt white chocolate chips with heavy cream and unsalted butter. Stir constantly until smooth and glossy. Let it cool to room temperature.
Whisk the coconut pineapple puree and melted ganache together until well combined. Fold in the chopped macadamia nuts, reserving a handful for garnishing.
Pour the mixture into 4 individual serving bowls or glasses, ensuring an equal distribution of nuts. Freeze for at least 4 hours or overnight until firm.
Before serving, remove from freezer and let it soften slightly for easier scooping. Top with remaining passion fruit pulp and reserved macadamia nuts.
