Ingredients

  • 2 large ripe avocados
  • 8 oz beef sirloin, thinly sliced
  • 1 small head of cauliflower, riced
  • 2 tbsp sesame oil
  • 1/4 cup green onions, chopped
  • 1/4 cup red bell pepper, diced
  • 1/4 cup yellow bell pepper, diced
  • 2 cloves garlic, minced
  • 3 tbsp soy sauce (or coconut aminos for soy
  • free)
  • 2 tbsp gochujang (Korean red chili paste)
  • 1 tbsp rice vinegar
  • 1 tbsp honey or sugar substitute (e.g., erythritol)
  • 1 tsp fresh ginger, grated
  • Salt and pepper, to taste
  • Sesame seeds, for garnish

Instructions

  1. In a large bowl, combine beef sirloin with soy sauce (or coconut aminos), gochujang, rice vinegar, honey or sugar substitute, grated ginger, salt, and pepper. Mix well and set aside to marinate for 30 minutes.
  2. While the beef is marinating, prepare the cauliflower fried rice. In a large skillet, heat sesame oil over medium high heat. Add green onions, red and yellow bell peppers, and garlic. Sauté until softened and fragrant, about 3 minutes.
  3. Stir in riced cauliflower and cook for an additional 5 minutes, or until tender. Season with salt and pepper to taste. Remove from heat and set aside.
  4. Preheat a grill or grill pan to medium high heat. Grill the marinated beef sirloin for about 3 4 minutes per side, or until cooked to your desired doneness. Set aside.
  5. Cut avocados in half, remove the pit, and carefully scoop out some of the flesh from each half to create a shallow well. Drizzle with a little sesame oil and season with salt and pepper.
  6. Fill each avocado boat with cauliflower fried rice, then top with cooked bulgogi beef. Sprinkle with sesame seeds for garnish.
  7. Serve immediately and enjoy your Keto Korean Brunch!
