  • 1/4 cup coconut flour
  • 3 tbsp tapioca starch
  • 1/4 tsp sea salt
  • 1/4 cup honey
  • 1/4 cup almond butter

  • 1 tbsp orange zest
  • 1/2 tsp cardamom powder
  • 1/2 tsp cinnamon powder
  • 1/4 tsp nutmeg powder
  • 1/4 tsp ground ginger
  • 3 cups frozen mixed berries
  • 1 cup coconut cream

Instructions

  1. In a large bowl, combine almond flour, coconut flour, tapioca starch, and sea salt. Mix well.
  2. In a separate bowl, whisk together honey, almond butter, almond milk, orange zest, cardamom powder, cinnamon powder, nutmeg powder, and ground ginger until smooth.
  3. Gradually add the wet mixture into the dry ingredients, stirring continuously to combine.
  4. Press half of the mixture into the bottom of a silicone muffin tray, creating an even layer in each cup. Freeze for 30 minutes.
  5. In a blender, puree frozen mixed berries until smooth. Pass through a fine mesh strainer to remove seeds and set aside.
  6. In another bowl, whisk the coconut cream until it reaches stiff peaks. Fold the whipped coconut cream into the pureed mixed berries gently.
  7. Spoon the fruity coconut cream mixture on top of the frozen almond layer in each cup. Smooth the surface with a spatula.
  8. Sprinkle the remaining almond mixture over the fruit layer and press down lightly to create an even top.
  9. Freeze for at least 4 hours, or until firm.
  10. To serve, remove from the freezer 5 minutes before un molding.
