Instructions

  1. In a blender, combine almonds and coconut milk until smooth and creamy.
  2. In a saucepan, mix sugar, lemon juice, agar agar powder, and vanilla extract (if using). Heat over medium heat, stirring constantly, until the agar agar dissolves completely.
  3. Slowly add the almond coconut mixture to the heated agar mixture, stirring continuously. Cook for 5 minutes more, then remove from heat.
  4. Strain the mixture through a fine mesh sieve into a large bowl, pressing on the solids to extract all liquid. Discard the solids.
  5. Pour the mixture into individual serving dishes and refrigerate for at least 4 hours or until set.
  6. Once set, garnish with diced fruits and edible flowers.
