Ingredients

  • 1 cup full
  • fat coconut milk
  • 3/4 cup homemade almond milk
  • 2 tablespoons raw honey
  • 2 cups plain Greek yogurt (preferably grass
  • fed)
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of sea salt
  • 1 cup frozen mixed berries
  • Fresh mint leaves for garnish

Instructions

  1. In a small saucepan, gently warm the coconut milk and almond milk over low heat until just warm to the touch, about 5 minutes. Stir in the raw honey and let it dissolve completely. Remove from heat and allow to cool slightly.
  2. In a large mixing bowl, combine the Greek yogurt, vanilla extract, cinnamon, and sea salt. Once the milk mixture is cooled, gradually add it into the yogurt mixture while continuously whisking until well combined.
  3. Divide half of the mixture between six glasses, reserving the rest for another use or to top with additional fruits or nuts. Place a layer of frozen mixed berries atop each glass.
  4. Top the berries with the remaining yogurt mixture and garnish each glass with fresh mint leaves.
