  • 2 cups fresh mixed wild Nordic berries (lingonberries, cloudberries, black currants)
  • 1 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey
  • 2 tablespoons arrowroot powder
  • A pinch of sea salt
  • Optional: fresh mint leaves for garnish

Instructions

  1. Preheat oven to 350°F (180°C). Lightly grease a 9 inch round cake pan or pie dish.
  2. In a medium bowl, gently mix the berries, almond flour, arrowroot powder, and sea salt until well combined.
  3. Pour the melted coconut oil and honey over the mixture, stirring until fully incorporated.
  4. Pour the mixture into the prepared pan, smoothing the top with a spatula.
  5. Bake for 20 25 minutes, or until the edges are golden and the center is slightly jiggly. Remove from the oven and allow to cool completely before cutting into slices.
