In a saucepan over medium heat, combine berries, spices, and honey. Cook until the berries release their juices and become tender. Remove from heat and let it cool.
Once cooled, puree the mixture in a blender until smooth. Strain through a fine mesh sieve to remove seeds and set aside.
In another bowl, whisk together coconut milk and lemon juice until well combined.
Slowly add the berry puree to the coconut milk mixture while continuously stirring. Mix in 1/4 of the toasted pistachios.
Pour the mixture into ice cube trays or molds, leaving space for expansion. Freeze for at least 4 hours or until solid.
Before serving, allow the frozen treats to sit at room temperature for a few minutes for easier handling.
