Instructions

  1. In a medium bowl, combine mochi rice flour, water, sugar, and a pinch of salt. Stir until the mixture comes together into a dough. Cover with plastic wrap and let it rest for 30 minutes.
  2. Lightly dust your work surface with additional mochi rice flour. Roll the dough into a log shape and cut into equal portions. Shape each portion into a ball.
  3. In a steamer, steam the mochi balls for 15 20 minutes until they are soft but still hold their shape. Allow them to cool completely.
  4. Using an ice cream scoop, create a shallow indentation in each cooled mochi ball. Scoop cherry blossom ice cream into the indentations and gently press the ice cream into the mochi.
  5. If desired, drizzle sakura syrup over the ice cream and mochi combination for added flavor.
  6. Place each mochi creation on a serving plate, garnishing with edible sakura flowers for a touch of elegance.
