Ingredients

• 1 cup fresh raspberries
• 1/2 cup aquafaba
• 1/4 cup caster sugar
• 1 cup coconut cream
• 1/2 cup raspberry puree
• 1/4 cup lemon juice
• 1 tsp vanilla extract

• 3 cups crushed ice
• Fresh raspberries and mint leaves for garnish

Instructions

1. In a high speed blender, blend fresh raspberries until smooth to create the raspberry puree. Strain through a fine mesh sieve to remove seeds. Set aside.
2. In another blender, whip aquafaba with caster sugar until it forms stiff peaks. Gradually add in vanilla extract and a pinch of salt.
3. In a large pitcher, combine raspberry puree, coconut cream, lemon juice, and whipped aquafaba. Mix gently until well combined.
4. Fill 6 tall glasses with crushed ice, leaving about 2 inches from the top. Pour the cocktail mixture over the ice, dividing it evenly among the glasses.
5. Garnish with fresh raspberries and a sprig of mint on top, allowing the green foliage to shimmer against the frosty glass.
