Paleo-Friendly Akple & Stew – A Traditional Ghanaian Snack

1. 2 cups Cassava flour 2. 1 cup Palm oil 3. 1 medium Onion, chopped 4. 2 cloves Garlic, minced 5. 1 Tomato, diced 6. 1 cup Spinach, chopped 7. 1/2 cup Groundnut soup mix (peanuts, groundnuts, and crayfish) 8. Salt, to taste 9. Pepper, to taste 10. 3 cups Water
Instructions
In a large bowl, mix the cassava flour with water until a soft dough forms. Knead the dough until smooth.
Divide the dough into 6 equal portions and shape them into balls.
In a pot, heat half of the palm oil over medium heat. Add one portion of the dough and flatten it with your hands. Cook until golden brown on both sides. Remove and set aside. Repeat with the remaining dough and oil.
In another pot, heat the remaining palm oil. Add onions, garlic, tomatoes, groundnut soup mix, salt, and pepper. Stir well and cook for 5 minutes or until the vegetables soften.
Add water to the pot and bring the mixture to a boil. Reduce heat and let it simmer for 10 minutes.
Stir in spinach and cook for another 3 minutes.
Serve the Akple hot, accompanied by the delicious Stew.
