Instructions

  1. Preheat the oven to 425°F (220°C). Grease six 6 ounce ramekins or ovenproof custard cups and place them on a baking sheet.
  2. In a microwave safe bowl, melt the butter and chocolate together in 30 second increments, stirring after each addition, until smooth. Let cool slightly.
  3. In a separate bowl, whisk together the eggs, egg yolks, and sugar until pale and thickened. Stir in the melted chocolate mixture, then fold in the flour and salt.
  4. Divide the batter evenly among the prepared ramekins, filling each one about two thirds full.
  5. Bake for 12 13 minutes or until the edges are set but the centers remain soft. Remove from the oven and let cool slightly.
  6. While the cakes are cooling, prepare the raspberry compote by combining the raspberries, sugar, lemon juice, and lemon zest in a saucepan. Cook over medium heat, stirring occasionally, until the mixture begins to thicken. In a small bowl, mix the cornstarch with 2 teaspoons of water and whisk it into the raspberry mixture. Continue to cook for another minute or two until slightly thickened. Remove from heat and let cool.
  7. To serve, gently run a knife around the edge of each ramekin and invert onto individual plates. Top with a dollop of compote and garnish with fresh raspberries.
