Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until browned on all sides and cooked through, about 8 10 minutes. Remove from the skillet and set aside.
  2. In the same skillet, add garlic, onion, and bell peppers. Sauté for 3 4 minutes or until the vegetables are tender.
  3. Add the chopped kale to the skillet and cook for another 2 3 minutes until wilted.
  4. Stir in diced tomatoes and cooked chicken. Season with salt and pepper, if needed. Cook for an additional 2 minutes to allow flavors to meld.
  5. For the Cauliflower Rice: In a food processor or using a box grater, rice the cauliflower. Heat a separate skillet over medium heat, add a little olive oil, and sauté the riced cauliflower with onion, bell peppers, and garlic until tender, about 5 7 minutes.
