Ingredients

  • 1 1/2 cups warm water
  • 1 package active dry yeast (2 1/4 teaspoons)
  • 1 tablespoon sugar
  • 4 cups all
  • purpose flour, plus more for dusting
  • 1/3 cup sunflower oil, plus more for frying
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 2 cups sliced cremini mushrooms
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup vegetable broth
  • 1 tablespoon tomato paste
  • 2 teaspoons paprika
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large mixing bowl, combine the warm water, yeast, and sugar. Let it sit until it becomes frothy, about 5 minutes.
  2. Add flour, oil, salt, and baking powder to the yeast mixture. Mix well until a smooth dough forms.
  3. Knead the dough on a floured surface for about 10 minutes or until it is elastic and slightly sticky.
  4. Place the dough in an oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
  5. In a pan, heat some sunflower oil for frying over medium high heat.
  6. Divide the dough into 12 equal portions. On a floured surface, roll out each portion to about 1/8 inch thickness.
  7. Carefully slide each rolled dough into the hot oil and fry until golden brown on both sides. Remove from oil and place on paper towels to drain.
  8. In a separate pan, sauté the mushrooms, onions, and garlic in vegetable broth over medium heat until tender. Stir in tomato paste and paprika, then season with salt and pepper to taste.
  9. Serve the fried dough rings warm, topped with a generous spoonful of the creamy mushroom gravy. Garnish with fresh parsley.

Chef’s Insight

This recipe is a vegan adaptation of the classic Hungarian dish, langos, which traditionally includes dairy products. By using mushrooms and vegetable broth, we create a creamy gravy that rivals its non-vegan counterpart in taste and texture.

Notes

This recipe requires active dry yeast. If using instant yeast, reduce the amount by half.

Cultural or Historical Background
