Instructions

  1. Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, reduce heat, and simmer until quinoa is cooked and fluffy, about 15 20 minutes. Set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until softened and translucent, about 4 5 minutes.
  4. Stir in cumin, paprika, salt, and pepper. Cook for another minute to release aromas.
