Add onions and garlic, sautéing for 3 4 minutes until translucent. c. Slice the mushrooms and add them to the pan with the onion mixture. Sauté for an additional 5 minutes or until mushrooms are tender. d. In a blender, combine silken tofu, lemon juice, parsley, and dill, blending until smooth. Pour this sauce over the sautéed mushroom mix and stir well. Season with salt and pepper to taste. e. To serve, spoon lemon herb quinoa onto plates and top with creamy mushroom stroganoff.
