Ingredients

  • 8 oz chicken breast, boneless and skinless
  • 4 oz tempeh
  • 1 cup cauliflower rice
  • 2 tbsp coconut oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium tomato, chopped
  • 1/2 cup red bell pepper, chopped
  • 1/4 cup green onions, thinly sliced
  • 2 tbsp tamari or coconut aminos
  • 1 tbsp fish sauce (optional)
  • Salt and black pepper to taste
  • Optional: a pinch of cayenne for added heat

Instructions

  1. Slice the chicken into thin strips and set aside. Cut tempeh into small cubes, then pat dry with paper towels.
  2. In a large pan or wok, heat 1 tbsp coconut oil over medium high heat. Add the chicken strips and cook until browned on all sides. Remove from pan and set aside.
  3. In the same pan, add another tablespoon of coconut oil. Fry the tempeh cubes until golden brown and crispy. Transfer to a plate and set aside.
  4. Add the remaining tbsp of coconut oil, onions, and garlic. Sauté for 2 3 minutes or until fragrant and onions are translucent.
  5. Stir in the cauliflower rice, breaking up any large clumps with a spatula or wooden spoon. Cook for about 4 minutes, stirring occasionally to prevent sticking.
  6. Add tomato, red bell pepper, tamari or coconut aminos, and optional fish sauce. Season with salt, black pepper, and cayenne if using. Mix well and cook for another 2 3 minutes.
  7. Return the cooked chicken and crispy tempeh to the pan, stirring gently to combine all ingredients. Cook for an additional 1 2 minutes, ensuring flavors are well combined.
  8. Remove from heat and garnish with green onions. Serve immediately, alongside a fresh green salad or steamed vegetables.
