1/2 cup manchego cheese, grated (use vegan alternative)
4 slices country bread, toasted
2 large eggs
1/4 cup serrano ham, thinly sliced (use vegetarian alternative)
1 tbsp olive oil
Salt and pepper, to taste
Instructions
a. Heat olive oil in a pan over medium heat. Add crumbled chorizo style vegan sausage and cook until browned. Set aside. b. In the same pan, add diced potatoes and cook until they are golden brown. Season with salt and pepper. Remove from heat and set aside. c. In a separate pan, cook red onion and sliced red bell pepper over medium heat until tender. Add potato mixture to the pan, mix well, and season with salt and pepper. Set aside. d. Cook eggs to your preference in a small pan or using an immersion circulator for perfect poached eggs. e. Assemble tapas: spread the manchego cheese on top of the toasted country bread slices. Top with serrano ham (or vegetarian alternative) and potato mixture. Add cooked chorizo style vegan sausage, green olives, and capers. Finish with a perfectly poached egg. f. Serve immediately and enjoy your Spanish brunch tapas feast!
