Instructions
In a large pot, bring water to boil and cook fava beans until tender but still firm, around 30 minutes. Drain and let cool. Remove skins from the fava beans. In a bowl, whisk together lemon juice, olive oil, garlic, cumin, salt, and pepper. Set aside. Grill chicken breasts to desired doneness, brushing with half of the dressing during cooking. Let rest for 5 minutes before slicing. Toss cooked fava beans with remaining dressing. Serve fava bean salad on a platter, top with grilled chicken, and garnish with parsley and mint leaves.
