Ingredients
- 2 cups fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup butter, melted
- 1 large egg, beaten
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin.
- In a large bowl, combine spinach, feta cheese, almond flour, coconut flour, melted butter, egg, salt, black pepper, nutmeg, ground cinnamon, garlic powder, and onion powder. Mix until well combined.
- Spoon the mixture into each mini muffin cup, filling them almost to the top.
- Bake for 20 25 minutes or until the tops are golden brown and crispy.
- Remove from oven and let cool slightly before removing from the tin. Serve warm.

To achieve that perfect flaky crust, be sure to work the butter into the flours until it resembles coarse meal. - For an extra touch of flavor, sprinkle a pinch of ground cinnamon over the bites before baking.
Notes
To make these bites even more flavorful, consider adding a pinch of nutmeg to the filling mixture.
