1. 1 cup quinoa, rinsed and drained 2. 2 cups water or vegetable broth 3. 1 medium avocado, sliced 4. 1 cup cherry tomatoes, halved 5. 1/2 cup black beans, drained and rinsed 6. 1/2 cup cucumber, diced 7. 1/4 cup red onion, finely chopped 8. 1/4 cup fresh parsley, chopped 9. 1 tablespoon lemon juice 10. Salt and pepper, to taste 11. 2 tablespoons feta cheese (optional)
Instructions
In a medium saucepan, combine quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and cook for 15 minutes or until quinoa is tender and has absorbed the liquid. Remove from heat and let stand covered for 5 minutes.
While quinoa cooks, prepare your other ingredients: slice avocado, halve cherry tomatoes, drain black beans, dice cucumber, chop red onion, and chop fresh parsley.
Once quinoa is cooked and has rested, fluff it with a fork. Season with salt and pepper to taste.
Divide quinoa among two bowls. Top each bowl with avocado slices, cherry tomatoes, black beans, cucumber, red onion, parsley, and lemon juice. Add feta cheese if using.
