  • 4 boneless, skinless chicken breasts 1 large zucchini, spiralized into noodles 1 avocado, diced 1 cucumber, thinly sliced 1/2 cup cherry tomatoes, halved 1/4 cup fresh parsley, chopped 1/4 cup fresh basil, chopped Juice of 1 lemon 1 tbsp olive oil Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the juice of one lemon, olive oil, salt, and pepper. Set aside.
  2. Marinate chicken breasts in the lemon mixture for at least 30 minutes.
  3. Preheat grill or grill pan to medium high heat. Grill chicken until cooked through, about 6 7 minutes per side.
  4. In a large bowl, toss together avocado, cucumber, cherry tomatoes, parsley, and basil.
  5. Add lemon dressing to the salad and toss gently to combine.
  6. Serve chicken over Crispy Zucchini Noodles with Avocado & Cucumber Salad on the side.
