  • 1 cup cauliflower rice 2 tbsp olive oil 1 cup julienned carrots 1 cup thinly sliced red bell pepper 1/2 cup edamame, shelled 1/4 cup fresh basil leaves, torn 1/4 cup cilantro leaves, chopped 3 tbsp fresh lime juice 1 tbsp sesame oil Salt and pepper to taste Crushed peanuts for garnish

  2. In another skillet, sauté carrots and red bell pepper for 3 4 minutes, until slightly tender.
  3. Add edamame to the pan and cook for an additional 1 2 minutes.
  4. Combine cauliflower rice with sautéed vegetables in a bowl.
  5. Top with fresh basil leaves, cilantro leaves, lime juice, sesame oil, salt, and pepper. Toss gently to combine.
  6. Garnish with crushed peanuts.
