Ingredients

  • 1 lb lean beef sirloin, thinly sliced
  • 2 cups mixed leafy greens
  • 1 cup shiitake mushrooms, sliced
  • 1 cup red bell pepper, thinly sliced
  • 1 cup carrots, julienned
  • 1/2 cup cilantro, chopped
  • 1/2 cup green onions, chopped
  • 1/4 cup rice vinegar
  • 3 tbsp low
  • sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp fresh ginger, minced
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions

  1. a. In a large bowl, whisk together rice vinegar, low sodium soy sauce, honey, ginger, salt, and pepper. Set aside. b. Marinate beef slices in half of the sauce for 15 20 minutes, then set aside. c. In a large skillet or wok, heat sesame oil over high heat. Remove beef from marinade and cook until browned and cooked through. Set aside. d. In the same skillet, add shiitake mushrooms and red bell pepper. Cook until tender crisp. e. Add julienned carrots and marinated sauce to the skillet. Cook for 2 minutes, then add cooked beef back into the mix. f. Divide mixed leafy greens among 4 bowls. Top with vegetable and beef mixture, garnish with cilantro and green onions. Enjoy!
