Ingredients

  • 2 cups jasmine rice
  • 1 cup mung beans, soaked overnight and cooked
  • 2 cups mixed vegetables (carrots, bell peppers, zucchini)
  • 1 cup tofu, cubed
  • 4 oz. mushrooms, sliced
  • 1 bunch green onions
  • 2 tbsp sesame oil
  • 1/4 cup vegetable broth
  • Salt and pepper, to taste

Instructions

  1. Cook jasmine rice according to package instructions.
  2. In a large pan, heat sesame oil over medium heat. Add vegetables and cook until tender, about 7 minutes.
  3. Add tofu and mushrooms to the pan and cook for another 5 minutes.
  4. Stir in cooked mung beans and green onions. Cook for an additional 2 3 minutes.
  5. Season with salt and pepper to taste. Serve over rice.
