Instructions
In a large skillet, heat the ghee or coconut oil over medium heat. Add the onion, garlic, and ginger, sautéing until softened and fragrant, about 2 3 minutes.
Stir in the curry powder, turmeric, cayenne pepper (if using), salt, and black pepper, cooking for another minute to release the flavors.
Add the coconut milk to the skillet and bring it to a simmer. Cook for 5 minutes, allowing the flavors to meld together.
Add the shrimp to the skillet and cook until they turn pink and opaque, about 4 5 minutes. Stir occasionally to ensure even cooking.
In a separate pan, heat a small amount of ghee or coconut oil over medium heat. Sauté the cauliflower rice for 4 5 minutes, or until tender but not mushy. Season with salt and black pepper to taste.
To serve, divide the cauliflower rice among two bowls, top with the shrimp curry, garnish with fresh cilantro, and serve with lime wedges on the side.
