2 tbsp peanuts, roasted and chopped
1 tbsp lime juice

1 tsp honey or maple syrup
1/2 avocado, thinly sliced
Instructions
If using jasmine rice, cook according to package instructions and set aside.
Grill the lean chicken breast and thinly slice once cooled.
In a bowl, combine the cucumber, carrot, mixed sprouts, mint leaves, and cilantro leaves.
Add the cooked jasmine rice (if using), grilled chicken slices, roasted peanuts, avocado slices, lime juice, fish sauce, and honey or maple syrup. Toss gently to combine.
