Ingredients

  • 2 (6 oz) salmon fillets
  • 1 lb fresh asparagus
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the asparagus and trim off the tough ends.

  4. Place the seasoned asparagus on a baking sheet and roast for 8 10 minutes until tender but still crisp.

  6. Place salmon on a separate baking sheet and bake for 12 15 minutes or until cooked through and flaky.
  7. Divide the roasted asparagus among two plates, then place a salmon fillet on top.
  8. Garnish with fresh parsley and serve immediately.
