While the rice is still warm, gently separate it into individual bite sized portions and shape them into balls using damp hands. Place the rice balls on a serving plate and set aside. Peel and slice the mangoes into thin strips. Top each rice ball with a few mango slices and drizzle with caramel sauce. Garnish with fresh mint leaves and serve immediately.
