  • 2 lbs grass
  • fed beef sirloin, thinly sliced
  • 4 cups fresh iceberg lettuce leaves, washed and patted dry
  • 1 cup paleo BBQ sauce (see recipe below)

  • 3 cloves garlic, minced
  • 2 tablespoons coconut aminos
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon ground ginger
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • Green onions, chopped, for garnish
  • Sesame seeds, for garnish Paleo BBQ Sauce:
  • 1 cup tomato sauce
  • 2 tablespoons coconut aminos
  • 1/4 cup honey or maple syrup (for Paleo)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, whisk together all the ingredients for the Paleo BBQ sauce. Set aside.
  2. In another large bowl, combine the beef slices, half of the prepared Paleo BBQ sauce, coconut aminos, vinegar, ginger, black pepper, and cayenne pepper (if using). Toss to coat the beef evenly. Cover and marinate in the refrigerator for at least 2 hours or up to overnight.
  3. In a large skillet over medium heat, cook the marinated beef until browned and cooked through, about 5 7 minutes. Stir frequently and add more BBQ sauce as needed.
  4. Add the sliced onions and minced garlic to the skillet with the beef, cooking for an additional 2 3 minutes or until the onions are translucent and the garlic is fragrant.
  5. Remove the cooked beef mixture from heat and let it rest while you prepare the lettuce wraps.
  6. To assemble, place a scoop of the cooked beef mixture onto each lettuce leaf, garnish with green onions and sesame seeds, then fold the leaf around the filling to create a delicious, portable snack!
