Ingredients

  • 2 medium zucchinis
  • 1 cup spinach
  • 1/2 cup red bell pepper, thinly sliced
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup Thai green curry paste
  • 1/4 cup coconut milk
  • 1 tbsp lime juice
  • 1 tbsp olive oil

Instructions

  1. Spiralize the zucchinis to create noodle shapes.
  2. In a pan, heat the olive oil over medium heat.
  3. Add the Thai green curry paste and cook for 1 minute.
  4. Stir in the coconut milk and bring to a simmer.
  5. Add the zucchini noodles and cook until tender, about 3 4 minutes.
  6. Add spinach, red bell pepper, green onions, and cilantro. Cook for another 2 minutes until spinach wilts.
  7. Stir in lime juice and remove from heat.
