Ingredients
- 1 cup cooked quinoa
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, thinly sliced
- 1/2 cup edamame, shelled and blanched
- 1/4 cup chopped fresh basil
- 1/4 cup mixed nuts, such as almonds and walnuts
- 1/4 cup pumpkin seeds
- 1 tbsp olive oil
- Juice of one lemon
- Salt and pepper, to taste
Instructions
- In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber slices, edamame, and chopped basil.
- Drizzle with olive oil and squeeze the lemon juice over the mixture.
- Season with salt and pepper to taste.
- Top with avocado slices, mixed nuts, and pumpkin seeds.
- Toss gently to combine.
- Serve immediately.
