- 1 cup cauliflower rice 1 tbsp ghee 1/2 tsp mustard seeds 1/4 tsp turmeric powder 1/4 tsp ground cumin 1/4 tsp ground coriander 1/4 tsp paprika 1/8 tsp cayenne pepper 1/2 cup chopped spinach 1/4 cup chopped bell peppers 1/4 cup diced tomatoes 1/2 cup cooked chicken, shredded Salt and black pepper to taste 1 tbsp chopped fresh cilantro 1 tbsp chopped almonds
Instructions
- In a large pan, heat ghee over medium heat.
- Add mustard seeds and cover the pan with a lid until they start popping.
- Stir in turmeric, cumin, coriander, paprika, and cayenne pepper. Cook for 1 minute.
- Add cauliflower rice and cook for 5 minutes, stirring occasionally to prevent sticking.
- Incorporate spinach, bell peppers, and tomatoes, cooking for another 3 minutes or until the vegetables are tender.
- Mix in cooked chicken and season with salt and black pepper to taste.
- Remove from heat, garnish with cilantro and almonds. Serve immediately.
