  • 1 cup uncooked quinoa 2 cups water 1/2 cup cherry tomatoes, halved 1/2 cup cucumber, diced 1/4 cup red onion, thinly sliced 1/4 cup fresh parsley, chopped 1/4 cup fresh mint, chopped 1/4 cup lemon juice 2 tbsp olive oil Salt and pepper to taste
