  • 1/2 cup 2. Chickpeas

  2. Prepare the rest of the ingredients while the quinoa cools down.
  3. In a large bowl, combine cooled quinoa, chickpeas, spinach, diced mango, sliced almonds, and coconut flakes. Drizzle with lemon juice and toss gently.
  4. Season with salt and pepper to taste.
  5. Garnish with fresh mint leaves.
