Ingredients
1 cup cooked farro 1 cup cherry tomatoes, halved 1 cucumber, diced 1/2 cup Kalamata olives, pitted 1/4 cup feta cheese, crumbled 1/4 cup fresh parsley, chopped 1 avocado, sliced 2 cups mixed berries (strawberries, blueberries, raspberries) 1 cup spinach, washed and roughly chopped 1/4 cup pumpkin seeds 1/4 cup sunflower seeds 1/4 cup almonds, sliced 1 lemon, juiced 2 cups mixed greens (kale, collard greens, Swiss chard) Olive oil Salt and pepper, to taste
Instructions
In a large bowl, combine cooked farro, cherry tomatoes, cucumber, Kalamata olives, feta cheese, parsley, and avocado. Gently toss to combine. In a separate bowl, mix the mixed berries with lemon juice and a drizzle of olive oil. Season with salt and pepper to taste. Assemble each bowl by placing a bed of mixed greens at the bottom. Top with the farro mixture, followed by spinach, pumpkin seeds, sunflower seeds, almonds, and the berry mixture.
