Instructions
- Cook quinoa according to package instructions, then let it cool.
- In a large bowl, combine quinoa, cherry tomatoes, cucumber, red onion, parsley, and mint leaves.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine.
